We had our first forage of the pine mushroom season this week, better late than never, but what a haul! Thanks to the recent wet weather, there were lots of nice small mushrooms just starting to poke their heads out of the pine needles. We'll be pickling and smoking these mushrooms, as well as serving them up on a pine mushroom pizza. Hopefully we can squeeze in another forage before the season finishes!
